The Crop

Our cocoa grows under the forest canopy of western Uganda, where deep, fertile rift-valley soils and rainforest humidity produce beans with a naturally fruity, fine-flavour profile. Pods are harvested at full ripeness and broken within 24 hours.

Instead of leaving fermentation to chance on thousands of small farms, we buy wet beans and ferment them centrally in cedar boxes for 6–7 days — turning by hand, monitoring temperature, then sun-drying on raised beds. The result is a consistent, well-fermented bean, lot after lot.

How We Prepare It

From pod to export bean

Harvest & Pod Break

Ripe pods only, broken within 24 hours of harvest. Wet beans travel to our fermentary the same day — freshness is the first quality gate.

Cedar-Box Fermentation

6–7 days in cedar boxes, turned on schedule and temperature-checked daily. This is where chocolate flavour is made — and where we refuse shortcuts.

Sun-Drying & Grading

Slow drying on raised beds to ≤7.5% moisture, then hand-sorting, cut tests on every lot and grading to export standard.
